4 Ways to Build the Perfect Slice
Avocado toast has a reputation problem. It's been mocked as the millennial cliché, the overpriced brunch staple, the thing that's supposedly standing between an entire generation and home ownership. We're here to set the record straight: avocado toast, done properly, is one of the most nutritionally complete, satisfying, and genuinely delicious quick meals in existence.
The problem isn't the avocado toast. The problem is most people are making it wrong. A smear of avocado on plain bread with a sprinkle of salt is the starting point — not the destination. Here are four variations that turn this humble dish into something truly special.

The Base Recipe
- 1 ripe avocado (it should yield slightly to gentle pressure)
- 2 slices sourdough or seeded whole-grain bread
- Juice of ½ lemon or lime
- Flaky sea salt (Maldon is our favourite)
- Freshly cracked black pepper
- Red chilli flakes (optional but recommended)
Method
- Toast your bread until golden and crisp. This is non-negotiable — soggy toast ruins everything.
- Halve the avocado, remove the pit, and scoop the flesh into a bowl.
- Add lemon juice, a generous pinch of salt, and pepper. Mash with a fork to your preferred texture — we like it somewhere between chunky and smooth.
- Spread generously on toast. Don't be shy — this is the foundation of everything that follows.
- Season with flaky salt, cracked pepper, and chilli flakes. Eat immediately.
The Four Variations
1. The Classic Egg
The most popular for good reason. Top your base with a perfectly poached or soft-boiled egg. The runny yolk creates a sauce that transforms the whole thing. Season with everything bagel seasoning, a drizzle of hot sauce, and fresh chives. For the egg: bring water to a gentle simmer, add a splash of vinegar, create a gentle whirlpool, and slide in a cracked egg. Cook for exactly 3 minutes for a perfectly runny yolk.
2. The Mediterranean
Skip the egg and go plant-based. Top your avocado with halved cherry tomatoes, crumbled feta cheese, Kalamata olives (sliced), fresh basil leaves, and a drizzle of good extra virgin olive oil. Finish with a squeeze of lemon and a crack of black pepper. This variation is bright, tangy, and deeply satisfying — and it comes together in under two minutes once your toast is ready.
3. The Smoked Salmon
Elegant enough for a weekend brunch, quick enough for a Tuesday morning. Layer smoked salmon over your avocado base, then top with thinly sliced red onion, capers, a dollop of crème fraîche or Greek yogurt, and fresh dill. Finish with lemon zest and black pepper. The combination of rich avocado, silky salmon, and briny capers is genuinely extraordinary.
4. The Spicy Mango
Our most adventurous variation — and arguably our favourite. Dice fresh mango and toss with lime juice, red chilli, and a pinch of salt. Pile it on top of your avocado base alongside thinly sliced jalapeño, fresh cilantro, and a drizzle of sriracha or chilli oil. The sweet heat of the mango against the creamy avocado is a combination that will genuinely surprise you.

Why Avocado Is Worth It
Avocados are one of the most nutritionally dense foods you can eat. They're rich in monounsaturated fats — the same heart-healthy fats found in olive oil — that reduce inflammation, support brain function, and help your body absorb fat-soluble vitamins from other foods. They're also loaded with potassium (more than bananas), folate, vitamin K, and fiber.
From a satiety standpoint, the combination of healthy fat and fiber in avocado is uniquely filling. Studies show that people who eat avocado at breakfast consume significantly fewer calories over the rest of the day — not because they're restricting, but because they're genuinely satisfied.

Ripeness is everything. An underripe avocado is firm, flavorless, and impossible to mash. An overripe one is brown and bitter. You want one that yields to gentle pressure but isn't mushy. Buy slightly underripe ones and leave them on the counter for 1–2 days.
Bread matters more than you think. Good sourdough from a bakery makes a real difference. The slight tang of sourdough pairs perfectly with avocado's richness, and the crust gives you the structural integrity to hold all those toppings.
Season aggressively. Avocado needs salt, acid, and heat to come alive. Don't be timid with the lemon juice, the salt, or the chilli. Taste as you go.
Eat it immediately. Avocado oxidizes quickly. Once you've made it, eat it. This is not a meal prep food — it's a present-moment food. Which, honestly, makes it even more aligned with the feel good philosophy.
